Winter Cabbage & Apple Salad

Ingredients

Miso Vinaigrette

  • 2 tablespoons yellow miso paste
  • 1 tablespoon Dijon mustard
  • 1 lemon, juiced
  • 1 teaspoon soy sauce
  • 2 tablespoons water
  • ½ cup olive oil

Salad

  • 4 cups shredded green cabbage
  • 2 granny smith apples, sliced into matchstick
  • ¼ cup roasted peanuts
  • ½ cup pomegranate seeds
  • 4 scallions, thinly sliced
  • ¼ cup fried shallots
  • 4 mint leaves, minced
Directions

Place all vinaigrette ingredients other than oil into a blender. Purée until smooth. With the motor running, drizzle in the oil until emulsified. Season with salt and pepper.

Toss the salad ingredients in a large bowl with miso vinaigrette.
