Marble Potatoes

Every delicious meal deserves a delicious side of potatoes. Simply roast marble spuds (the fun, bite-sized ones) with garlic, salt, and rosemary to tease out maximum flavor. Serve them with whatever you like or sneak a few by themselves—they’re really that good.

Ingredients

Marble Potatoes

  • 1 head garlic
  • 1 pound marble potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons minced rosemary leaves
  • Salt and pepper, to taste
  • Maldon salt, for garnish
Directions

Preheat the oven to 400°F. Wrap the garlic in tin foil, drizzle with olive oil, and roast until very tender and fragrant, about 20 minutes.

Toss the potatoes on a baking sheet with 2 tablespoons olive oil, rosemary, and a pinch of salt. Roast for 16-18 minutes, until fork-tender

Toss the roasted potatoes with the roasted garlic on the sheet pan, transfer to a serving dish and sprinkle with maldon salt to serve.
