Your Perfect Burger

Ingredients

Potato Salad

  • 1 pound red bliss potatoes, quartered
  • 1 cup mayonnaise
  • ½ red onion, diced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon whole grain mustard
  • 1 jalapeño pepper, deseeded and diced
  • 2 tablespoons dill pickle relish
  • 4 green onions, minced
  • ½ cup fresh cilantro, chopped
  • 2 tablespoons capers, drained 
  • ¼ cup dill, chopped 
  • Salt and pepper to taste

Burgers

  • 8 slices bacon
  • 1 pound ground beef
  • 4 slices sharp cheddar cheese

Burger Sauce

  • 1 cup mayonnaise
  • 1/2 cup peppadew peppers, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lemon, juiced
  • 2 tablespoons Dijon mustard

Serving

  • 4 brioche hamburger buns
  • 1 red onion, sliced thinly
  • 8 butter lettuce leaves
  • 2 tomatoes, sliced thinly
Directions

In a medium pot with a steamer basket, add 1 inch of water and the potatoes. Bring to a simmer, cover, and cook for 10-12 minutes, or until fork-tender. Drain the potatoes.

In a large bowl, combine the remaining potato salad ingredients. Fold in the potatoes and season with salt and pepper to taste.

Heat a skillet over medium and cook the bacon until crisp, turning once. Transfer to a paper towel-lined plate to drain.

Blend the burger sauce ingredients in a blender until smooth. Season to taste.

Shape the beef into 4 patties. Season liberally with salt and pepper.

Heat the oil in a skillet over medium heat. When hot, add the patties and cook, flipping once, until seared on each side and cooked all the way through, about 8 minutes. Add the cheese after flipping.

Serve the burgers on brioche buns with onion, lettuce, tomatoes, pickles, bacon and sauce.
