My good friend named this dish and how could I refuse! Portobello mushrooms are roasted and stuffed with truffled ricotta cheese. The mushrooms are served over port wine onions and braised winter greens. The portobellos are accompanied by the best beets ever, chioggia! They are a beautiful pink hue with white rings and are earthy and sweet.
