This seasonal cake starts with roasted spaghetti squash, which is an unbelievable and underrated ingredient in baked goods. The squash is baked into the cake to make something better than carrot cake.
The cake is layered with a vanilla diplomate cream (pastry cream folded with whipped cream) and fine layer of feuilletine (little crunchy bits of baked crepe), Valrhona Dulcey chocolate, pumpkin seeds, and pumpkin seed oil.
This is my go-to winter season spice cake!
