This fun take on meatloaf is packed full of protein and fiber. Cremini mushrooms are the base of this meatless meal. They are ground and mixed with nutritional yeast (my favorite cheese substitute!), tofu, bulgar, garlic and basil. The "meatloaf" is served with a wild mushroom jus and braised broccoli rabe.
