This classic southern French stew is made with no meat. Instead, I've studded it with plenty of sweet root vegetables, wild mushrooms, butternut squash, slow cooked white beans, tomatoes, onions and leeks. Finally, it's topped it with a delicious, herbed breadcrumb topping.
