Eel is tossed with a traditional Japanese barbecue sauce and then sauteed to give it a sweet, caramelized finish. Chef Truong serves this over a bed of steamed sushi rice topped with sesame seeds and minced chives. A few pickled cucumbers are included, as well as a chile-tamari-mirin sauce that gives the whole thing a spicy-sweet finish.
