A vegetarian pho? You’d better believe it! And it’s winning over the hearts and stomachs of serious noodle fans. Vietnamese pho is an herbaceous, satisfying meal in a bowl. Plump, flavorful tofu and chewy rice noodles elevate an aromatic star anise-flavored broth with fistfuls of basil and cilantro, bright lime juice, crisp shallots, and, if you like it, spicy jalapeno. All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, water) and around 15 minutes to create this delicious dinner for two.

The portion of noodles was surprisingly small, and the tofu was totally different kind from what was shown in the photo
