We do think sumac is super. It's a spice used profusely in the Middle East as a marinade, in seasoning, and even in drinks. It imparts an earthy lemoney quality that is truly unique. We marinate chicken breast with sumac, garlic, onions, thyme, and olive oil, then grill it and serve it with a wheat berry and lentil salad. You drizzle on the tahini vinaigrette as you like.
