This great dish, with many flavors and layers, gets its name from the tandoor, a cylindrical oven used in parts of Asia. Mary's chicken is marinated in a rich, complex spice mixture and grilled. The biriyani, made with basmati rice and its own complex spice profile to match the chicken, is served with cooling raita (Indian flavored yogurt) and a mango chutney. It also comes with soft pita bread so you can scoop together all the different flavor combinations!
