We slow-roast a garnet sweet potato so it's creamy and luscious. It gets set over a black bean and quinoa bowl that's seasoned with cumin, toasted pumpkin seeds, and some fresh pico de gallo. You can cube up the sweet potato and stir it into the bowl or spoon it out of the skin as you go. It's your dinner— your call!
