Our staff is shucking fresh, local corn like crazy this time of year. With that many cobs for us to use, we make stocks & chowders & now pudding! The "corn bones" are steeped in heavy cream with vanilla & sugar to make a custard, then baked like creme brulee. Fresh blackberries & lime creme fraiche add a nice acidity.
