Savoy cabbage leaves are blanched and stuffed with red quinoa, roasted cremini mushrooms, tofu, oregano and thyme. The cabbage rolls are slowly braised in a red bell pepper and tomato sauce. The dish is topped with roasted cabbage and lemon zest. Comforting and low carb!
