These steak enchiladas are a Tex-Mex favorite. Flour tortillas are filled with lean skirt steak and smothered in a homemade red sauce with tomatoes and chili peppers. Finish with melted Mexican cheese and a sprig of fresh cilantro for garnish. Smoked black beans & cilantro rice round out this plate of comfort food.

The enchiladas have chunks of beef inside and cheese and peppers, giving them a lot of flavor! The rice has a nice taste to it and the cheese on the beans makes them great.
