Stews are a staple of my Hispanic comfort food repertoire. Every single region has them, no matter what time of the year. This particular dish features free range chicken breast braised in a tomato and jalapeno broth. As it cooks down, the sauce naturally thickens and develops a full, round flavor. Hints of spices and just enough heat are its main characteristics. The dish comes with flour tortillas, a wedge of lime, cilantro and slices of raw jalapenos (for those who-like me-enjoy a little extra heat!). I also add Summer squash & fresh peas. If the tortillas are not enough to soak up the flavors of the sauce, there's also a side of steamed basmati rice with it. Enjoy!
