The classic spring salad with "Green Goddess" dressing is an American classic from San Francisco's Palace Hotel circa 1923. It was Chef Philip Roemer's tribute to actor George Arliss and his hit play, "The Green Goddess." Tarragon and chives add fresh, herbal flavor to the creaminess of the dressing, which you toss with the lettuces, vegetables, and sharp pickled onion.
