Chicken thighs (that thick and yummy part) are brined and then smoke-roasted until super tender. The meat is shredded and tossed with a smoky house-made barbecue sauce. It's piled on a soft onion-poppyseed bun with a crispy sweet cabbage slaw. On the side, it's served with a green chile potato salad.
