Plump chicken breasts are chilled overnight in an aromatic and smoky marinade then roasted until tender. Once cool, it's cut into big cubes and set on top of peppery baby arugula along with shaved fennel, seedless red grapes, and toasted almonds. We give you some of our house-made apple cider vinaigrette on the side as well as some shaved Parmesan cheese to toss it all together.
