Our brisket is rubbed with Kosher salt and cracked black pepper, then house-smoked over kiln-dried oak for 18 hours to give it a deep smoky flavor. We slice and serve both the lean and marbled (fattier, but with loads of flavor!) pieces. You add as much of the meat, creamy American cheese sauce, and pickled jalapeño slices on the seeded Martin's potato bun as you like.
On the side: Cape Cod kettle-cooked potato chips.
