Our brisket is rubbed with nothing but Kosher salt and cracked black pepper, then smoked over Texas oak in our house smoker for 15 hours. We serve both lean and marbled (a little fattier, for a more tender and flavorful piece). We serve it with grilled asparagus and creamy mashed potatoes topped with house-made gravy.
