A more refined example of surf and turf, this salad combines the smoke and spice of chorizo with plump sauteed shrimp. Butter beans, green beans, and a mix of arugula and tatsoi (a dark green with a hint of a mustard taste) are dressed in a well-balanced muscat vinaigrette and topped with shaved manchego in this satisfying salad.

Interesting combination...I guess this is what I would also throw together with leftover ingredients, but it works. I would give it a higher rating but the shrimp was a tad salty.
