Mojo Criollo is a Cuban creation that combines tomatoes, onions, green olives, capers and white wine in a sauce. Spoon it over a filet of sea bass and squeeze the charred lemon over everything to enhance the flavors. A mash made with yucca potatoes (also know also as cassava) is whipped until creamy and served with crisp green snap peas. Que sabroso!

Kinda bland meal. The hair sandwiched between the fish & mashed potatoes was a huge surprise. Our dinner the night before was amazing! Assuming this is a fluke. Will give them another try....
