Mojo Criollo is a Cuban creation that combines tomatoes, onions, green olives, capers and white wine in a sauce. Spoon it over a filet of sea bass and squeeze the charred lemon over everything to enhance the flavors. A mash made with yucca potatoes (also know also as cassava) is whipped until creamy and served with crisp green snap peas. Que sabroso!
