Pork sausage and ground beef are mixed with rice, milk, parsley, and scallions and then it's all stuffed into red bell peppers. They're roasted and finished with a sweet and sour tomato-pepper purée. On the side: lacinato kale sautéed with roasted apples, pine nuts, raisins, garlic, and fennel.
