We're always looking for fun ways to make delicious veggie burgers, like this version inspired by the flavors of Indian samosas. The patty is made with Yukon Gold potatoes, sweet peas, cilantro, and curry. For a sweet-and-sour kick, we pickle onion in tamarind and mix that in, too. It comes with iceberg lettuce, tomatoes, and slices of English cucumber to layer on the Panorama brioche bun. Crunchy jicama sticks (plus a wedge of lime for spritzing) come alongside.
On the side: Greek yogurt spread flavored with feta and cilantro chutney.
