Pan-seared salmon comes with sides of creamy polenta and simply grilled broccoli.
On the side: crumbled feta cheese (we put that on the polenta) and a tart citrus gremolata sauce (featuring herbs and garlic along with orange juice and yuzu, a tart but very aromatic citrus fruit) that's tasty on both the salmon and the broccoli. Use both (or either, or neither) as you see fit.
