I've paired the traditional Spanish sauce made of pureed piquillo peppers, also known as romesco, with the cauliflower-esque spiral spikes of romanesco. Alliteration is cool, but the way these flavors work together as a vegetable salad is even cooler. Accompanied by a sweet and nutty almond-raisin compote and a lemon-parsley vinaigrette.
