I've taken one of national dishes of Spain and I've substituted loads of summer vegetables for a meal that is healthy and hearty. Arborio rice is flavored with saffron and topped with portabella mushrooms, eggplant, zucchini, artichokes, asparagus, summer squash, and piquillo peppers. Pair with sangria or a Spanish red and savor this paella. Ole!
