Here is an updated take on a classic salad. A boneless, skin-on chicken breast is marinated with lemon, parsley, and garlic and then roasted. It's served over little gem lettuce leaves with red grapes, crushed walnuts, blue cheese crumbles, and thinly sliced radishes. It comes with a yogurt-based dressing that has diced apples, celery and red onion, parsley, lemon, and apple cider vinegar stirred in for added yumminess.
