We're truly spoiled in southern California with a wide variety of fresh produce. To get the most out of these ingredients is my challenge as a chef. Roasting brings out a clean complexity to these root vegetables by balancing natural sweetness, earthiness, bitterness, and a touch of licorice flavor in the fennel. Toasted hazelnuts and a miso dressing make this a light meal for any time of year.

Very tasty salad with lots of surprises inside. Loved the dressing. The whole roasted carrots, brussel sprouts and beets made this delicious. Presentation when we received it was beautiful.
