Pumpkin is such a wonderful food for bakers. It makes everything ridiculously moist and lends a softer texture to these brioche-style cinnamon rolls. I also browned the butter to complement the earthy nuttiness of the pumpkin. The cream cheese icing is an exercise in patience - try not to eat it all with a spoon while you're waiting for your cinnamon roll to heat up.
