This is one of my favorite preparations of albacore tuna. I slowly poach the fish in olive oil to keep it moist, then the chunks of tuna are tossed with arugula, cannellini beans, roasted tomatoes and zucchini in a creamy salsa verde. The Italian-style dressing keeps this salad bright and zesty. Buon appetito!
