Peruvian-style ceviche made with Pacific snapper, shrimp, octopus, and calamari marinated in "leche de tigre" (which translates as "tiger's milk," a spice brew made with citrus juice, chiles, red onion, and cilantro). Served with classic accompaniments of sweet potato and giant Peruvian corn. A light dish we love in the summer or as the start of a bigger meal.
