We start with Hodo Soy tofu, made in Oakland. We marinate it with lemongrass, garlic and chiles, then grill it and dice it before putting it on a bed of rice noodles with fresh veggies, lots of herbs, and house-made nuoc cham, the classic sweet and spicy Vietnamese sauce.
