If only everyone had an Italian grandmother. The kind who would cook homemade caponata. She would simmer globe eggplant with garlic, tomatoes, sweet red bell peppers, and summer squash, splash in a bit of balsamic vinegar along with a handful of plump currants and tender pine nut. Then chill it, spread it on a multigrain ciabatta roll, tuck in some Belfiore mozzarella and wild arugula, and bring it to you at work. We are that Italian grandmother.
