Now this is a sandwich that is flavorful and somewhat light at the same time! The chicken thighs used for this sandwich have been marinated in lime juice, Dijon mustard, low sodium soy sauce, lime juice, Peruvian yellow peppers and garlic. It is served with julienne carrots, fresh cilantro sprigs, sliced cucumbers and onions in a country style Italian bread. There's a side of jalapeno pepper aioli, and another side of cold potato salad (potatoes, mayo, American mustard, carrots, onions, celery, green onions, peas) to complete the dish. I would suggest that the bread is heated in a preheated oven, a microwave usually leaves the bread somewhat chewy.
