A fragrant mix of cremini mushrooms, sliced onions, and strips of poblano chiles (mildly spicy) are sautéed together until caramelized and fragrant. Stuff the vegetables into warmed corn tortillas along with some of our Spanish-style quinoa and a dollop or two of the chipotle crema.
