This center-cut pork loin is marinated in a sweet adobo sauce made of garlic, soy sauce, and vinegar before being grilled and sauced with the avocado purée. A vibrant arroz verde is cooked like a pilaf and gets its bright green color from spinach and cilantro. To finish everything off, the smoky sweetness of the grilled pineapple chunks melds perfectly with the pork.

Great value for an 840 calorie dish. Avocado puree was DELICIOUS. Pork chop was very tender (using microwave option) and well seasoned; plus the pork fat was edible. I would make this dish for family/friends...with just a little more pineapple.

The pork was cooked to the right temperature. Grilled pineapple added a nice sweet touch to the dish. Can't go wrong with avacado purée.
