Wraps are a common street food in many parts of the world. Ours has a Middle Eastern twist, thanks to the addition of roasted and puréed eggplant, kalamata olives, and feta cheese. We give you all those ingredients, as well as some quinoa, lemon zest, and fresh herbs so you can fill and fold your own to your specific preferences. All you need is basic kitchen equipment (microwave/oven, bowls, a knife, salt, pepper, and oil) and around 15 minutes to create these yummy wraps for two.
