Chicken thighs are marinated in lemongrass, then grilled and served on top of a green papaya, jicama, carrot, cucumber, and pineapple salad. The dish is garnished with a peanut sambal relish, mint, and Thai basil. Top it all off with a tamarind dressing you add to taste.
