Roasting the tomatoes before using them to make the sauce brings out their natural sweetness; simmering it with onions, garlic, and red wine rounds it out that effect. Sweet roasted butternut squash, bright green broccoli florets, and snappy green beans add color and flavor. All of this is happening, by the way, on big fat pappardelle pasta, which is pretty darn fun to eat. On the side: shavings of Parmesan cheese for sprinkling. We deliver the sauce in its own container so it doesn't make the pasta mushy, but it has the added benefit of not touching anything for those eaters with picky plating requirements.
