This potato version of the classic is a hit with the kids (and adults too)! Not only are potatoes high in potassium, but this meal is made healthier with a generous topping of tomatoes, peppers, black beans, olives and green onion. With cheddar and monterey jack covering this meal, your kids will devour all their veggies. Traditional Salsa Mexicana and sour cream are served on the side. Enjoy!

Yes! All the food groups and my 2 year old can explore dipping in the salsa and sour cream. Cut up into smaller pieces and mom gets to eat the leftovers.

Tasty (a little bit of spice which was fine for my kids, but might not be for yours) and a good portion size. Unfortunately, the kids dishes no longer come with a tangerine and cookie though and we miss that.
