Kerala chicken is inspired by a dish from Bekal in the north part of western Kerala, a state on India's tropical Malabar Coast. It's cooked in an herbaceous sauce full of chiles, cilantro, bay leaves, and wonderful earthy spices.
Lap it up with naan or sesame rice (both included) as people do from street-side food stalls in India. We also serve it with a side of roasted butternut squash and Brussels sprouts.
