Kerala chicken is inspired by a dish from Bekal in the north part of western Kerala, a state on India's tropical Malabar Coast. It's cooked in an herbaceous sauce full of chiles, cilantro, bay leaves, and wonderful earthy spices. Lap it up with naan or sesame rice (both included) as people do from street-side food stalls in India. We also serve it with a side of roasted butternut squash and Brussels sprouts. Spice Level: Medium *DOSA combines the spices and authentic culinary traditions of India with a California focus on fresh, seasonal ingredients to deliver a diverse selection of dishes that have made it a Bay Area dining favorite.
