You don't need to hop on a trans-Pacific flight to try this BBQ favorite from the Hawaiian islands. I've basted this Huli Huli chicken in a soy-pineapple marinade and grilled to perfection. Served with a light and refreshing tabbouleh salad made of pickled apricot, scallion, cucumber, tomato and a squeeze lemon juice. Mahalo!
