Hudson Flower is a sheep's milk cheese that starts out it's life at Old Chatham Sheepherding Co.'s farm, and then gets sent to Murray's cheese caves for a little spa treatment - the wheels are coated with a blend of herbs and spices and left to hang out and ripen further. The result is a smooth, silky paste with a light hint of smokiness and a mushroom-y finish. I pair this cheese with honey-thyme roasted walnuts, a zesty date butter, and house made baguette slices drizzled with olive oil and toasted to crispy perfection.
