Five layers of contrasting textures and flavors combine in this indulgent treat. A thin layer of hazelnut sablé is baked with hazelnut frangipane. Then krispy rice and hazelnut praline are spread with a sprinkling of toasted hazelnuts and Maldon salt. And finally, I use Valrhona Jivara milk chocolate and a splash of cognac for the creamy top layer ganache.

I'm not a big fan of alcohol in my food, but I thought I would give this a try. How wonderful is this thing?!??! I love the way the ganache melts in your mouth while the sable (which I now know is a cookie) made of hazlenuts is astonishingly good.
