"America's Sweetheart" is how I used to describe this dish at The Cosmopolitan because it was so popular. Fresh Tombo tuna is ground and seasoned lightly with soy, ginger, sesame and mustard, grilled rare and served on my potato bun. Topped with a heirloom tomato and avocado salsa. Served with lightly fried and breaded zucchini fries, and a kimchi aioli.
