Chicken thighs are marinated in achiote paste and fresh herbs then grilled until charred and flavorful. We slice the chicken, then stuff the pieces into a flour tortilla that's filled with freshly grated Jack and cheddar cheese. It's griddled until browned, crisp, and melted perfectly. On the side, we give you some fixings to dress up the quesadilla how ever your heart desires; sour cream, fire-roasted tomato salsa, and our house-made pickled red cabbage for a bit of crunchy zing.
