Sometimes grilling can bring out unexpected flavors. Peaches caramelize thanks to their sugar content, but a deep and smoky side of the fruit also emerges. Using baby kale gives this salad substance, pickled onions give it tang, toasted almonds some crunch, and the ricotta salata imparts a subtle saltiness. Salads continue to be some of the most adventurous courses I've enjoyed.
