Chayote is a gourd that is abundant throughout Latin America and resembles a yam when cooked properly. We've created a salad around fried slices of chayote breaded in panko bread crumbs and medallions of marinated soft goat cheese. The base of the salad is a peppery mix of arugula, spinach, and watercress with sliced strawberries tossed in for subtle sweetness. Finish with a drizzle of the tamarind balsamic and the poppy seed vinaigrette and toss. Enjoy!
